Why we built this kit

Iced matcha is harder than hot matcha. Cold water doesn’t disperse the powder the way 175°F water does, and a regular whisk in a coffee mug leaves you with green flecks instead of a smooth drink. Why this kit works for iced

Matcha clumps because it’s electrostatically charged powder. Hot water has enough thermal energy to break the clumps with a whisk; cold water doesn’t — it traps the lumps. The recipe in this kit uses the hybrid method: whisk a small hot concentrate first, then pour it over ice and milk in each glass. The bamboo whisk does the work the cold water can’t.
